Karen's Rice
1/4 mild onion finely chopped
1-2 Tbs olive oil
1 cup long-grain rice (jasmine or ordinary)
1 1/2 boiling water with 1 bouilion cube dissolved in it (I use veggie kosher, when I can get it, or chicken kosher when I can't)
Saute onion in oil until clear add rice and continue sauteing until rice grains begin to get clear, but not quite start toasting
Add boiling bouilion.
Stir once
Cover immediately
Reduce heat to simmer for 13 minutes.
Remove from heat, turn lid up and don't let moisture fall into rice.
Holding lid upside down cover with a thin dish towel, replace lid of pot, towel and all. Flip ends of towel over top of lid.
Let stand 5- 10 minutes.
Stir and serve.
